A popular spice, used like black pepper to season foods in countries such as India, Africa, Morocco, and regions of Asia. Grown on branches of the Piper longum or the Piper retrofractum plants from the pepper family of plants, the berries of the long pepper are clustered on short narrow stems that have a rough outer skin with an appearance very similar to an elongated, miniature pinecone prior to opening. The berry of this pepper can be broken into smaller bits to be ground into a spice providing a sweet and spicy tasting flavor. Long pepper is often used with other spices to flavor foods such as spicy cheeses, stews and lamb dishes.

Long pepper commanded a high price during the days of the Roman Empire – about three times the price of black pepper. With its flavor, both pungent and sweet, it was perfectly suited to Roman cooking which favored these two taste sensations.
Preparing - To use it, simply crush it with a mortar and pestle
Cooking - It's great sprinkled on rounds of fresh goat cheese. Use it to make steak "au poivre." Go Medieval and make a sweet-spicy dessert by poaching pears in white wine, vanilla, a touch of sugar and lots of long pepper.
You will find long pepper used in India for pickles, in Thailand for soups and stir fries and in Ethiopia for traditional meat stews. The spice mix berebere contains long pepper along with dried chiles, ginger, cinnamon, cloves, and cardamom.
Try This Long Pepper Stew Recipe!
This is a no-brainer to make, especially if you own a crockpot (slow cooker) with an automatic setting like I do. Just throw the recipe together in the morning before work, and you'll come home to the delicious scent of chicken stew wafting through the house. The prunes and their sauce add richness and depth to the meat as well as visual entertainment. Add some cooked rice or a salad as an accompaniment, and dinner is served...
Long Pepper Stew
4 - 5 chicken thighs, skinned
1 large red onion, diced
1 can of prunes in syrup
1 cup of white wine
1/2 tsp long pepper, ground
1. Put the chicken thighs, onion, prunes (including all that lovely syrupy goodness they come stored in), wine and ground long pepper into the crockpot.
2. Turn on Automatic or Low setting. Leave for 3 -4 or more hours.
3.Serve!
Note: You can use water or stock instead of wine if you feel abstentious, but it won't taste as good.
