Hot water helps to release healthy polyphenols from the tea, but water that is too hot is thought to cause bitterness. Add roughly 1 teaspoon of loose tea leaves per teapot (roughly 3-5 cups of tea).
Tea should be steeped for one to five minutes. The polyphenol content of the tea will increase with greater steeping time, but more than 5 minutes can result in bitter tea. Many believe that green tea tastes ideal when brewed for just one minute.
Optionally strain the tea, pour into warmed teacups, and sip gently while the tea is still hot.
