This premium Fumee de Sel sea salt by Le Tresor is extraordinary! Unlike any smoked sea salt available. Fleur de Sel is cold smoked with Chardonnay oak chips to preserve the mineral content and natural flavor of the salt. Fumee de Sel is smoked from seasoned French oak wine barrels, which for years have been used in the aging of fine wines. The five to seven year old barrels are hand selected for wood smoking chips. Starting with salt crystals that are hand raked in France and ending with the all natural smoking that has to be done in very small batches. This unique smoked salt is hand made from start to finish. The crystals are smoked to a light toasty brown and have a deep smoke flavor without being bitter. The moist salt crystals readily absorb the natural smoked flavors of the oak and chardonnay.
Chardonnay oak smoked sea salt is a very unusual salt which teams an unlikely pair together; a prestigious winery and an artisinal salt company. The salt crystals are raked by hand. To dry, the salt is smoked over fires made from the burning of hand selected French oak wine barrels, which have been used to house and age fine French chardonnay for five to seven years. The salt turns a light brown hue fromt the roasting. The salt absorbs not only the smoke flavor but also the oak and chardonnay. Use this salt to finish a extraordinary dish. Fumee Sea Salt Ribs Recipe!
Ingredients
- olive oil
- Fumee de Sel Chardonnay Oak Smoked Sea Salt
- coarse ground black Tellicherry peppercorns
- 1 rack spare ribs
Serves 4
Preparation Instructions
Mix salt and pepper together into a rub. Brush the ribs with oil. Rub ribs with salt & pepper mix. Grill over low heat (from a burner on opposite side of grill) until done, about 2 hours (depends on grill).
Helpful Hints
If your grill has two burners place the ribs over one burner (kept off) and set the other burner on low.
