Bilberries - are smaller than blueberries, and their intense pigments are evenly distributed throughout the skin and flesh. This is in sharp contrast to blueberries in which the pigments are located principally in the berry's skin.

Elderberries - are popular for their purple black fruit color which is used in pies, wines, jellies, jams, juices and soup. They can also be used as a natural colour in food products. Elderberry blossoms are also used in wine making or can be deep fried.

Hawthorn Berries - can be used in cooking much like other tree fruits (it smells like apples during the extracting process). Many love hawthorn berry pie. A 61-year-old man told me his wife's grandparents raised hawthorn trees on their farm. They made hawthorn berry jelly and sold it every fall for many, many years.
